Grilled pineapple is a delicious summertime treat — but it's even better when coated in maple syrup and cardamom and dipped into yogurt.
- 1 whole pineapple
- 10 cardamom seeds
- 1/4 cup maple syrup or liquid honey
- Fresh basil leaves to taste
- 2 cups plain Greek yogurt
1 Peel and core the pineapple. Cut the flesh lengthwise into 20 thin slices. Transfer the pineapple slices to paper towels to pat dry. Grill the pineapple slices in a cast-iron skillet or on the barbecue, turning once.
2 Meanwhile, use a mortar and pestle to crush the cardamom seeds. Whisk the crushed cardamom into the maple syrup. Brush the spiced syrup over the pineapple slices. Chop the basil and sprinkle over the pineapple slices. Serve with Greek yogurt on the side for dipping.
